Fishing and Day Camping for the Kids

We are blessed to be able to spend a lot of time on the water, some of our best memories are of those lake days way back in the day. We are trying to give the same oppurtunity to a group of kids that would otherwise never be able to have these experiences.
The rough details I had in mind are:
-Planning a day camping experience to give the kids an idea of what it's like to go camping. It won't be overnight due to logistics, strain on the staff, # of kids etc.
-It will be at Lake Monroe campgrounds[
Lake Monroe Park] by I4, where the St Johns river meets Lake Monroe. I have reserved camp sites 14-17 which have a community firepit area.
-Starting around 1PM and ending around 8 or 8:30PM. I know the staff work till 10PM and it's a 35 minute drive back to the foster home.
I will have a 2-3 boats on hand to take the groups of kids down the St.Johns river, fishing and just checking out nature in general; it maybe Manatee season also.
-Any volunteers that want to fish will need a fishing license; it's like $17 for an annual license[

-After fishing and cruising the St. Johns we would grill dinner at the campsites at the park; teaching the kids how to build campfires, makes smores etc.
-There will be around 15 kids and about 3 to 5 staff members.
